Step by step
- Soak for 4 to 6 hours. Use room-temperature water, never hot — hot water damages the strands and dissolves nutrients. The nest will expand several times in volume.
- Remove feathers. Lift out any remaining fine feathers with tweezers.
- Rinse and drain. Rinse gently and drain through a fine sieve.
- Double-boil for 30 minutes. Place the nest in a heatproof bowl with fresh water, set the bowl inside a larger pot of simmering water, cover, and steam. Direct boiling breaks the strands.
- Add rock sugar at the end. Add in the last 5 minutes so it dissolves without over-sweetening.
How to cook bird’s nest without a double boiler
Place the soaked bird’s nest in a heatproof ceramic or glass bowl with water, then stand that bowl inside a covered pot containing a few centimetres of simmering water. This creates the same gentle indirect heat as a double boiler. Keep the water level below the rim of the inner bowl.
How to cook bird’s nest in a slow cooker
Soak and clean as above, then cook on low for about 1 to 2 hours. A slow cooker is gentler than stovetop boiling and is difficult to overcook, but takes longer than double-boiling.
